The only method to downgrade Tears of the Kingdom is to factory reset your Switch and then install the base version of the game.

While you can turn off auto-update, some players are still reporting that Tears of the Kingdom updates. Therefore, to ensure your version of Tears of the Kingdom does not update, you'll need to disable wifi or put it on airplane mode. If your Switch cannot connect to the internet, there is no possible way it can update.
Does the Dupe Glitch still work in Zelda Tears of the Kingdom?
At the time of writing, this duplication glitch works with version 1.1.2. in Tears of the Kingdom. YouTuber Kibblers Gaming showcases how to dupe items after the update. However, Nintendo will likely patch this glitch out soon, so you must either duplicate the items you need or turn off automatic updates.
