Emotes are used differently in every game, and some use them to let you express emotion and communicate without having to actually say any words to your teammates, while some of them just exist as a way for your personality to shine through to your character. Emotes are most likely used for both in Tiny Tina's Wonderlands, and here is how you can use them.

By default players will have access to two emotes in the Quick menu. However, as you play through the game and unlock more emotes from slaying enemies, you will be able to add more emotes to the wheel and change out the original two. You can change your active emotes by heading to the quick change station located at Izzy's Fizzies. Within the change station menu, you will see an Emote tab that you can navigate over to. When you select an emote it will ask where in the wheel you want to assign it.
So there you have it, that is how you can emote in Tiny Tina's Wonderlands. There are plenty of emotes to be found, so you can do a jig on your fallen foes or communicate a nod of approval to your teammates.
