The answer is yes—Coromon does support crossplay between the Nintendo Switch and PC versions. This was confirmed in the official CoromonTheGame AMA held on Reddit. However, the developers did not mention if this would extend to the mobile version of Coromon.

Is Coromon cross-platform?
Coromon will also support cross-platform features. This was specifically asked during the AMA. This was the response from the developers. "Yes! Cross-platform cloudsaves and cross-platform PvP will be available." This means that you will be able to battle your friends regardless of platform.
The cross-platform cloudsaves also allow you to play your game on either Steam or Nintendo Switch. If cross-platform features come to the mobile version, that is another platform you can play Coromon on without having to start a completely new game.
