Minsc's chosen Subclass is Hunter, but you can experiment with Gloom Stalker and Beast Master. Ability Improvement is one of the best feats to select, as you can quickly level up the ability of your choice to +20. I recommend quickly reaching +20 Dexterity with Minsc to make him a powerful Ranger.
Sharpshooter and Crossbow Expert are more inclined towards ranged damage, which works perfectly for Minsc. Sharpshooter allows you to perform ranged attacks without incurring a penalty from the High Ground Rules penalty.
